Bountiful Berries!


It is berry season! And berries abound in the central San Joaquin Valley! Our favorite strawberry stand (one street south of Herndon, Magill, just east of Willow) now has blueberries, cherries, blackberries, boysenberries, and all kinds of yummy veggies!

It's like a one-stop farmer's market! Randy prefers all his berries undefiled by whipped cream or baked goods. I love the excuse to whip something up to which the berries can be the perfect accompaniment! I tried this recipe this weekend and it turned out fantastic! Don't bother with Cool-whip though...please! Get a small carton of real whipped cream, whip it up with a couple teaspoons of sugar and a drop of vanilla. Your tastebuds will thank you!!!

Tabouleh salad

I have come to LOVE the food that is sold at the Vineyard Farmers' Market every week (Mediterranean to Go), but don't like paying $5 for a small tub of the tabouleh (which I could eat every day for lunch), so I thought I'd try making my own. I pulled up a recipe on one of my favorite food sites and experimented. Since all of the ingredients are now in season and I found a local supplier of bulgar wheat (which you can purchase at Whole Foods Market), I WILL be making this again! But here's the first try. This is 3/4 cup bulgur wheat (or so I thought). Unbeknownst to me when I first purchased it, there are many different "grinds" of bulgur wheat. Bulgur wheat is a pre-cooked grain, so all you need to do is add boiling water and let it set a bit until it absorbs the water and fluffs up. I added 1 cup of boiling water and let it sit 15 minutes like the recipe said, only to find it had hardly absorbed anything and was still fairly hard...thus the importance of buying the correct grind. I had a whole kernel barley (after purchasing it I put it in a container in the pantry and tossed the bag, then mixed them up since they looked so similar...it ended up fine though). What you need is a fine or medium grain bulgur. Well, I made do, adding a bit more water and setting it on the stove, covering and simmering it for another 15 minutes. Here we have a cucumber (my first one of the season came in my veggie box on Thursday), a tomato from Hanford, a bunch of flat-leaf parsley (also in my box from T & D Willey Farms), a bunch of mint (from KMK organic farm), and a spring onion (from a friend's garden). Give the onion (about 1/3 cup), the cucumber (about a cup) and the tomato (about a cup) all a fine dice. Give the parsley (about 1 cup) and the mint (1/4 cup) a fine chop as well. Add one or two cloves of minced garlic to all the veggies, as well as 2 TBSP extra-virgin olive oil, and 2 TBSP fresh lemon juice. Now, you might notice that these lemons aren't bright yellow...'cause they're not. They came out of my freezer, since it is no longer season for lemons. Did you know that lemons can be put in the freezer, whole, for up to a year? They actually give you more juice after they've been frozen then thawed! Add 1/4 tsp each of salt, pepper, and cumin (the recipe from which I adapted this called for cumin, I believe, because they also wanted you to add 2 cups chopped chicken...I prefer my tabouleh vegetarian...and next time, without cumin). Mix all your veggies, liquids, and spices. Mix in your bulgur wheat (which should be done soaking and fluffed by now). This is great scooped up with pita chips or naan. I like to serve it alongside these scrumptious little spinach pockets called Popeye's Favorites (also found at the Mediterranean To Go stand at the Vineyard Farmer's Market).

California Classic weekend

This weekend Fresno hosted the California Classic, a weekend full of fun races, both on bikes and on foot, for all ages. Randy participated in the half marathon this morning, racing his fastest time by far, 1 hour 32 minutes 33 seconds! Way to go Randy! The start was just outside Grizzlies' stadium, and the finish inside! We waited in the stands in left field, with the gorgeous sunshine on our faces! Way to go Randy! We are so proud of you!!!

Isaac is 8!

This past weekend we celebrated Isaac's 8th birthday! He had 8 of his friends over to help him celebrate...Star Wars style! So sorry for the extremely cluttered background (our garage), but since it rained through the entire party, we made do with the garage (aka a big open space for some games). We started off with some coloring pages (it is quite amazing how many Star Wars coloring pages you can find online). Next we played a blindfold game that divided the boys into teams (the Empire vs. the Rebellion) and they had to "shoot down" each other's ships on the star map. After that, we headed into the garage to continue our "jedi training" with some throwing practice. The boys drew targets with chalk on the cement then took turns tossing beanbags onto the targets. CJ's Jabba, worth 200 points! Gavin's Darth Vader, worth 3000 (yeah, the points were totally random). Next was a ring toss (glow-in-the-dark bracelets) onto light sabers (glow-up swords). This actually proved quite a challenge for 7 and 8 year old boys.



After all that fun in the garage, we went inside for presents and then cake! Isaac requested a cake shaped like Yoda's head. This is what Randy came up with! My husband is so creative!



Happy Birthday Isaac! To finish off the celebrations we are going to The 'Ol Pasketti Shop (as Isaac refers to it) for a family dinner tonight. We are so thankful to be able to celebrate yet another year with Isaac. He definitely keeps us on our toes (or on our knees...depending on the day), and we wouldn't change one bit of it all! We love you Isaac!

Show time!

This past Friday was the school musical, Dear Edwina. Since our church is just around the corner from the school, they let the kids use it every year for the production (so if the stage looks familiar, it is). It was Audrey's 3rd performance in the school drama. Once again, she did a fantastic job! I was so proud of her, all her hard work, after school practices, memorizing lines, lyrics, and motions! She played the part of Lola, which included a small solo and some acting during "her" song, Hola Lola. She also had a duet. Of course I'm biased 'cause I'm her mother, but I thought she was exceptional and wished I could watch it 10 more times! Way to go Audrey!
Aside from my bias of Audrey's stunning performance, it really was a good musical! The best one yet (great songs and a good storyline)! In case you missed it, I'm posting a few clips. Enjoy!


Our good friend and neighbor, C.J., made his debut performance in this year's musical as Farmer Jerry. He was great!
